Baked Chicken Wings with Lime & Chilli

This is one of my favourite recipes.  It is easy to prepare and taste absolutely zesty and hot.

What you need:

2 kgs of split chicken wings
1 teaspoon of 5 spice powder
1 teaspoon of paprika
2 teaspoon of salt
3 - 5 tablespoons of oil
5 - 6 tablespoons of Thai hot chilli sauce (Sriracha), you can use Indonesian or Malaysian hot chilli sauce.  If you like it real hot, add more.
2 cubes of melted butter, that's about 50 g or so
chop some coriander
1 lime (about 90g), for its juice and zest

In a pot, marinate the split chicken wings with 5 spice powder, paprika, salt, oil.  Leave it for 2 hours or so before baking.

Heat the oven at 180°C.  Spread the wings on foil, don't overlap them or they will not crisp/brown.  Bake for 35 minutes.  Preferably, locate the baking tray about one quarter distance from the bottom where you get the full heat force.

When it is baked through, return the chicken wings into a clean pot.  In a bowl, mix the melted butter with lime juice, zest and chilli sauce together.  Pour the sauce into the pot and coat it well with the chicken wings.  Oh, don't forget the coriander should go in as well.
